Ultra-Pasteurized vs Pasteurized milk.

We recently decided to switch Elson from lactose-free to regular whole milk, mostly due to cost. And it turns out, he does not have a lactose intolerance! Phew. But I noticed the lactose-free milk said it was “ultra-pasteurized” and the regular just said “pasteurized.” Of course, I had to know the difference.

The difference is essentially the temperature the milk is heated to before it is packaged. Ultra-pasteurized milk is heated to greater temperatures, killing off more bacteria than pasteurized milk. You’ll notice ultra-pasteurized milk lasts longer in the fridge due to the difference in bacteria, but you likely won’t notice much of a difference in taste.
